Christmas Morning Pancakes

¾ cup eggnog
2 Tablespoons vinegar
1 cup flour
2 Tablespoons sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon nutmeg
1 egg
2 Tablespoons butter, melted

Cooking spray
Combine eggnog and vinegar and set aside for 5 minutes.  Combine dry ingredients and mix well with a spoon.  Add melted butter, egg, and eggnog mixture.  Stir just until combined.  Don’t overmix! Heat a large skillet over medium heat and spray with cooking spray.  Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.  Top with butter and your favorite syrup, or whipped cream and sprinkles!
